Triple Chocolate Valentine Soufflé

Serves/Makes: 4


Ingredients:
4 ounces butter
7 ounces all-purpose flour
4 ounces sugar
1/4 teaspoon vanilla extract
2 cups milk (can use 2 percent milk)
8 eggs, separated
4 tablespoons good-quality cocoa powder
4 tablespoons Oreo cookie crumbs
1 3/4 ounce Godiva liqueur (or substitute another flavor, such as Chambord, Grand Marnier, Kahlua, etc.)


Directions:
Over medium heat, melt 3 ounces of the butter. Add the flour and stir with a stainless steel whisk, breaking up lumps of flour. Add 3 ounces of the sugar, the vanilla and the milk. Stir with whisk until smooth. When batter begins to stick to whisk, remove from heat. Transfer to an electric mixer. Add egg yolks and mix well. Stir in cocoa, cookie crumbs and liqueur.

 

In a standing electric mixer or in a mixing bowl with a hand-held mixer, beat egg whites until stiff. Fold a little of the egg whites into the base mixture to lighten it. Fold in the rest of the egg whites.

 

Use remaining butter, softened, to butter the inside (bottom and sides) of 8-ounce ramekins. Make sure the butter covers the entire surface. Completely coat the inside of the ramekins with the remaining sugar. Carefully pour batter into center of each dish, filling it to very near the top.

 

Bake at 375 degrees for about 15 minutes. Serve immediately with vanilla ice cream and chocolate sauce.
 (After about 5 minutes, soufflés will begin to fall, so serve them right away.)

 

 

A bit Easier...


Classic Chocolate Soufflé

Yield: 6 servings


Ingredients:
1/3 cup (65 g) sugar
5 ounces (150 g) bittersweet chocolate (70%)
3 egg yolks
5 egg whites
a pinch of salt

 

Method:

  1. Preheat oven to 350 deg F (Gas mark 4 or 180 deg C)
  2. Grease one large soufflé dish or 6 small soufflé dishes.
  3. Melt the chocolate over hot water (in a double boiler).
  4. Add a pinch of salt to the egg whites and whisk with an electric mixer until they hold soft peaks.
  5. Add 1/3 cup of sugar gradually while whisking with the electric mixer.
  6. Mix gently the melted chocolate with the egg yolks and approximately one cup of the whisked egg whites.
  7. Fold in the remaining part of the whisked egg whites.
  8. Bake in the middle of the oven until crusted on top and practically cooked in the middle, approximately 25-35 minutes for a large soufflé dish.

 

Variations

    1. You may use bittersweet chocolate flavored with orange or raspberries for a delicious fruity flavor.

2 oz. Imperial Vodka or any other premium Vodka 
1/2 oz. Goldschlager

1 Sugar Cube

Combine in a shaker with ice, mix well and strain into a chilled Martini glass. Add sugar cube right before serving!
